A blend of half Chardonnay, half Pinot Noir, the organically-certified grapes for this sparkler hail from the 2010 vintage. This is a light, barely aromatic wine that’s refreshingly high in acidity. It tastes remarkably like a Gravenstein apple, but could also be mistaken for a delicious hard cider.
