Light hay in color and with a creamy, near-perfect foam, this sparkler shows fresh Asian pear, light plumeria, wet river stone and rain-on-sidewalk aromas, altogether quite minerally on the nose. Impressively textural, it’s cleansing on the palate, a bit like licking chalk, with flavors of lemon skin, tart yellow-apple rind and crisp pear flesh.
