There’s a savage appeal (what the French call sauvage) to this unabashedly rustic Cabernet Franc that was fermented entirely using wild yeasts. Initial notes of tomato leaf and green stem blow off to reveal aripe red fruit with a gorgeously floral character. Tart acidity and a concentrated red-cherry flavor are accented with graphite and black tea notes.
